Calcium diglutamate, sometimes abbreviated CDG and also called calcium glutamate, is a compound with formula Ca(C5H8NO4)2. 
It is a calcium acid salt of glutamic acid. 
CDG is a flavor enhancer (E number E623)—it is the calcium analog of monosodium glutamate (MSG). 
Because the glutamate is the actual flavor-enhancer, CDG has the same flavor-enhancing properties as MSG but without the increased sodium content.
As a soluble source of calcium ions, this chemical is also used as a first-aid treatment for exposure to hydrofluoric acid.

Flavour enhancers are yet another important component of food additives, which help to enhance the flavours of the food and add an additional appeal to the food preparation. 
Flavour enhancers are widely used in commercialised food products such as soups, snacks and frozen food products. Glutamate is one of the most commonly used flavour enhancers and occur naturally in tomatoes, cheese and mushrooms among others.

Glutamate is categorised on basis of its salt into monosodium glutamate, calcium diglutamate, monopotassium glutamate, magnesium diglutamateandmonoammonium glutamate that are widely used as flavour enhancers. 
Calcium glutamate is derived from calcium acid salt of glutamic acid. 
Naturally calcium diglutamate can be produced form the fermentation process from carbohydrate medium as well as from vegetable protein. 
It is commonly known as calcium glutamate or CDG. 
It is regarded as an analog of monosodium glutamate. 
However, the characteristic property of calcium diglutamate is that it helps to substitute the salt content in the diet and thereby reduces the amount of salt content to be used in the food preparation, hence is an emerging alternative for monosodium glutamate.

Calcium Diglutamate is the calcium salt from Glutamic Acid E620, a natural amino acid (building block of protein). Commercially prepared from molasses by bacterial fermentation.

Also prepared from vegetable protein, such as gluten, or soy protein. Less used and not as salty, low sodium salt substitute. 
Added to any savoury processed protein food.


Uses:  
Calcium Diglutamate is used as a flavour enhancer derived from the fermentation of molasses, salt substitute; 
adverse effects appear in some asthmatic people, should not be permitted in foods for infants and young children as it could damage the nervous system.

Purity of calcium Di-L-Glutamate 
The purity shall be not less than 98% by weight and not more than 102% by weight when equivalent to C10H16CaN2O 8 (calculated by dry weight not think of crystalline water) and must have other properties as follows

1. It is white crystals or crystalline powder, odorless, characteristic taste.
2. Easily soluble in water
3. Let the reaction of amino acids
4. Let the reaction of calcium
5. Water not more than 19 percent by weight ( Karl Fischer method )
6. SPECIFIC rotation -[µ]20D : +22.5 degrees to +24.0 degrees (using 10 g of dry sample, dissolved in 2 normal concentrations of hydrochloric acid to obtain a solution. 100 mL total, measured in a 20 decimeter long glass vial)
7. Chloride not more than 0.2% by weight
8. Arsenic (calculated as As) not more than 3 milligrams per 1 kg.
9. Lead (accounted for Pb) not more than 10 mg per 1 kg.
10. Heavy metals (accounted for Pb) not more than 20 milligrams per 1 kg.
