Introduction

Calcium 5'-ribonucleotides, designated as E634, is a flavor enhancer that is a mixture of calcium inosine-5'-monophosphate and calcium guanosine-5'-monophosphate. It is produced by the fermentation of sugars, which yields ribonucleic acid (RNA), which is then broken down and purified to create the final mixture. This additive is renowned for its ability to amplify savory flavors, known as umami, and it works synergistically with amino acids like glutamate.

When used in combination with monosodium glutamate (MSG), this additive can achieve a level of flavor enhancement many times greater than MSG used alone.
