Physical Properties:
Appearance: Dark green to blackish-green powder or liquid concentrate.

Description:
Semi-synthetic derivatives where magnesium in natural chlorophyll is replaced by copper, producing a stable, water-soluble green pigment. Unlike natural chlorophyll, E141 does not turn olive-brown upon heating or acid exposure. The copper is tightly chelated, preventing catalytic oxidation. The molecule retains the porphyrin ring structure, allowing it to bind volatile sulfur compounds (e.g., hydrogen sulfide, mercaptans), which explains its deodorizing effect. Toxicology studies show negligible copper release; ADI set at 0–15 mg/kg bw/day.
