E 202  is effective in a variety of applications including food, wine, and personal-care products.
While sorbic acid occurs naturally in rowan and hippophae berries, virtually all of the world's supply of sorbic acid, from which potassium sorbate is derived, is manufactured synthetically.

Production of E 202
E 202 is produced industrially by neutralizing sorbic acid with potassium hydroxide.
The precursor E 202 is produced in a two-step process via the condensation of crotonaldehyde and ketene.

Uses of E 202
E 202 is used to inhibit molds and yeasts in many foods, such as cheese, wine, yogurt, dried meats, apple cider, dehydrated fruits, soft drinks and fruit drinks, and baked goods.
E 202 is used in the preparation of items such as hotcake syrup and milkshakes served by fast-food restaurants such as McDonald's.
E 202 can also be found in the ingredients list of many dried fruit products.
In addition, herbal dietary supplement products generally contain potassium sorbate, which acts to prevent mold and microbes and to increase shelf life.
E 202 is used in quantities at which no adverse health effects are known, over short periods of time.

Labeling of this preservative on ingredient statements reads as "potassium sorbate" or "E202".
Also, E 202 is used in many personal-care products to inhibit the development of microorganisms for shelf stability.
Some manufacturers are using this preservative as a replacement for parabens.
Tube feeding of potassium sorbate reduces the gastric burden of pathogenic bacteria.

Also known as "wine stabilizer", E 202 produces sorbic acid when added to wine.
It serves two purposes.
When active fermentation has ceased and the wine is racked for the final time after clearing, potassium sorbate renders any surviving yeast incapable of multiplying.
Yeast living at that moment can continue fermenting any residual sugar into CO2 and alcohol, but when they die, no new yeast will be present to cause future fermentation.
When a wine is sweetened before bottling, E 202 is used to prevent refermentation when used in conjunction with potassium metabisulfite.

E 202 is primarily used with sweet wines, sparkling wines, and some hard ciders, but may be added to table wines, which exhibit difficulty in maintaining clarity after fining.
Some molds (notably some Trichoderma and Penicillium strains) and yeasts are able to detoxify sorbates by decarboxylation, producing piperylene (1,3-pentadiene).
The pentadiene manifests as a typical odor of kerosene or petroleum.

E 202 is a potassium salt having sorbate as the counterion.
E 202 has a role as an antimicrobial food preservative.
E 202 contains an (E,E)-sorbate.
Mold and yeast inhibitor.
Used as a fungistatic agent for foods, especially cheeses.

E 202 is a food additive used as a preservative in foods.
E 202 is known as the potassium salt of sorbic acid.
E 202 is a preservative that is especially effective against yeast and molds.
E 202 also extends the shelf life of the product.

E 202  is used as a food preservative in the Food Industry.
E 202  has a wide usage area against molds, yeasts and many bacteria.
The E code is E 202.
E 202 ; Its solubility in water is high, but it is slightly soluble in alcohol.

Application of E 202:
E 202, which is used in many food products and beverages, is active against mold, yeast and many aerobic bacteria.
While prolonging the life of foodstuffs, it does not limit the growth of beneficial bacteria, and is also effective in preserving the unique aroma of the food.
E 202 is used in many foodstuffs such as bread, margarine, tomato paste, mayonnaise, jam, fish, confectionery, cheese, yogurt, fruit products, bakery products.
E 202 is widely used in fruit juices as it has a neutral flavor.
Since E 202 is resistant to high temperature, it can be used easily in heat-treated foods.

E 202 is applied to food products by sprinkling as a powder, adding directly, dipping, spraying or placing in the package.
E 202 is used in food and beverage industries, as well as in personal care products and pharmaceutics.
Its use in personal care products prolongs the shelf life of products by preventing microbial growth.
Since the antimicrobial effect of E 202 is less than sorbic acid, it should be used in larger amounts than sorbic acid.
E 202 is more effective than sodium benzoate.
Since it does not affect the taste and smell of foods, it is a more suitable preservative than sodium benzoate in some uses.

E 202 is naturally present in fruits such as strawberries, cherries, rowanberries and tomatoes.
However, E 202 is also synthetically produced for industrial use.

E 202 was discovered by Frenchmen around 1850. They obtained it from berries of the European Mountain-ash tree (Sorbus aucuparia ), after which the acid is named.
E 202 grew first in South and East Asia but now grows in lots of parts of the world.

E 202, the potassium salt of sorbic acid, is a commonly used preservative in food with the European food additive number E202.
Generally, E 202 is synthetic, vegan and gluten-free.
This ingredient is used to protect food from spoilage and therefore prolong the food shelf life by slowing the growth of molds and yeasts.
You may have seen it in the label of wines, cheeses, cider, mead, soft drinks, and baked goods.

E 202 is an inhibitor of both yeasts and moulds, also active for several bacteria (2) but less effective.
E 202 is the sorbic acid (active form) that has the inhibitory activity which is generated after the ionization of potassium sorbate in water.
E 202 inhibits microbial growth by changing the cell membrane morphology, integrity and function and then disrupting the transport functions and metabolic activity.
This mechanism of preservation is similar to sodium benzoate, but different with that of nisin and natamycin.
