Introduction

L-leucine, designated as E641, is an essential amino acid, meaning it cannot be synthesized by the human body and must be obtained from the diet. As a food additive, it is classified as a flavor enhancer. It has a subtle, slightly bitter taste but is primarily valued for its ability to enhance and round out savory and fatty flavors, similar to how MSG works but on a different receptor pathway.

Its use as a food additive is somewhat niche, but it has gained importance in specific applications, such as acting as a carrier or filler in tabletop sweetener tablets and in specialized sports nutrition products. It is industrially produced via microbial fermentation.
