Description

Polyglyceryl-3 Polyricinoleate (PGPR) is a nonionic, lipophilic emulsifier primarily manufactured through the esterification of polyglycerol with polycondensed ricinoleic acid derived from castor oil. It is widely recognized as one of the most effective water-in-oil (W/O) emulsifiers and viscosity modifiers available for food, cosmetic, pharmaceutical, and industrial applications. PGPR significantly reduces interfacial tension between immiscible phases, thereby improving emulsion stability, flow properties, and processing efficiency.

PGPR has become particularly important in the chocolate industry, where it dramatically lowers the yield value and viscosity of molten chocolate, allowing manufacturers to improve mold filling, reduce cocoa butter requirements, and optimize production efficiency. In addition to food applications, PGPR is extensively employed in cosmetics as a skin-conditioning emulsifier and in pharmaceutical formulations as a stabilizer for lipid-based drug delivery systems.

Its excellent compatibility with vegetable oils, waxes, fats, and lipophilic ingredients makes PGPR one of the most versatile emulsifiers for low-moisture systems.

Physical Properties

PGPR is typically supplied as a highly viscous amber to dark yellow liquid with little or no characteristic odor. Due to its complex polymeric structure, it exhibits high molecular weight and excellent thermal stability. The material is highly lipophilic and essentially insoluble in water while being readily soluble in edible oils, fats, and many organic solvents.

Chemical Properties
