Used for standardizing Karl Fischer reagent, as a pharmaceutic aid (sequestering agent), and cathartic.
Used as an emulsifier, pH control agent, and sequestrant for foods.
Permitted for use as an inert ingredient in non-food pesticide products.

Disodium tartrate dihydrate is used in standardization of Karl fischer reagent to determine trace ammount of water (less than 1%).
