General Information
The E 131 is a synthetic azo colorant with a dark blue-violet color. 
The E 131 is produced by synthesis from coal tar. 
The molecular formula of the E131 additive: C54H62CaN4O14S4.
The E131 additive is banned as a food coloring in Australia, the United States and Norway. 
In Ukraine and Russia E 131 is allowed for use in foodstuffs as a purple colorant E131.
E 131, also called Food Blue 5, Sulphan Blue, Acid Blue 3, L-Blau 3, C-Blau 20, Patentblau V, Sky Blue, or C.I. 42051, is a sky blue synthetic triphenylmethane dye used as a food coloring.
As a food additive, it has E number E131. 
E 131 is a sodium or calcium salt of [4-(α-(4-diethylaminophenyl)-5-hydroxy- 2,4-disulfophenylmethylidene)-2,5-cyclohexadien-1-ylidene] diethylammonium hydroxide inner salt.
E 131 is a sodium salt of Patent Blue V, which is a light-sensitive dye with an absorption peak at 450 nm. 
E 131 has been used in analytical chemistry to measure the fatty acid content of oils and fats. 
E 131 has also been used as a reagent in kinetic studies to measure the rate of reactions involving detergent compositions, cationic surfactants, and hydroxyl groups. 
The lymphatic vessels react to this dye by showing an increase in permeability. 
The activation energies for these reactions have been determined using kinetic data.

E 131 is colourful green light blue. 
Soluble in cold water and hot water for the blue, soluble in ethanol for green light blue. 
The strong sulfuric acid for olive tan. 
In water solution to join sodium hydroxide low temperature discoloration, heat into deep purple.

Use
In the food industry, the E131 additive is not widely used, but it can be found in minced meat, sausage and meat products. 
Recently, E131 colorant is often used in some types of beverages.
E 131 is a water-soluble food colouring. 
E 131 has also been used as a standard for high-performance liquid chromatography-diode array detection for dating of paper ink. 

In addition to the food industry, the E 131 is used in medicine, as a diagnostic paint for procedures.
E 131 is not widely used, but in Europe it can be found in Scotch eggs,certain jelly sweets, blue Curaçao, certain gelatin desserts, among others. 
An important advantage is the very deep color E 131 produces even at low concentration, a disadvantage is that it fades fairly quickly when exposed to light.
In medicine, E 131 is used in lymphangiography and sentinel node biopsy as a dye to color lymph vessels.
E 131 is also used in dental disclosing tablets as a stain to show dental plaque on teeth.

The color of the dye is pH-dependent. 
In aqueous solution, its color will vary from a deep blue in alkaline or weakly acidic medium to a yellow–orange in stronger acidic conditions. 
E 131 is useful as a pH indicator for the range 0.8–3.0.
The structure is also redox-sensitive, changing from a reduced yellow form to an oxidized red form in solution. 
The reduction potential of around 0.77 volts is similar to that of other triphenylmethane dyes. 
E 131 is usable as a reversible redox indicator in some analytical methods.
Because of its pH-dependent color, E 131 was included in chemistry sets from Salter Science in the 1970s and 80s under the name Sky Blue.

Preparation    
(a) 3-Nitrobenzaldehyde and N,N-diethylbenzenamine (2 Moore) condensation, then reduction, then the amino diazotization and then translate into hydroxyl compound, and then two stlfonation, finally will product into calcium salt, and segregation and oxidation; (b)3-Hydroxybenzaldehyde and N,N-diethylbenzenamine (2 Moore) condensation, and then two stlfonation, into calcium salt and oxidation. 
The dyes can also be as sodium salting out.
