E 150b

CAS:    8028-89-5
MF:    C7H10O2
EINECS:    232-435-9

E 150b is a caramel colour food dye.
E 150b is made by heating carbohydrates in the presence of sulfite compounds.
E 150b is caustic sulphite caramel.
Its INS and E number is E150b.
Made with E 150b, including sulfurous acid (H2SO3), potassium sulfite (K2SO3), and sodium sulfite (Na2SO3).
E 150b's distinct red color and stability in alcohol makes it ideal in rum, wine, whiskey, and brandy.
E 150b also used in snacks.
A sugar-based food colorant made from liquid corn syrup by heating in the presence of catalysts to approximately 250F (121C) for several hours, cooling to 200F (93C), and filtering.
The brown color results from either Maillard reactions, true caramelization, or oxidative reactions.
E 150b are colloidal in nature, the particles being held in solution by either positive or negative electric charges.
Individuals with sulfur and sulfite sensitivities may wish to avoid E 150b.
The carbohydrate source for E 150b production may come from allergenic sources such as wheat, barley, or milk, so individuals with allergies may wish to avoid caramel colours or contact manufacturers to request information about allergen levels.

E 150b is produced from various carbohydrates like wheat, corn -dextrose, invert sugar, malt syrup from barley, molasses, lactose, wheat and corn starch hydrolysates, which are heated in the presence of acids like sulfites, alkalies like ammonium and the salts like ammonium, bicarbonate, sulfate and bisulfite.

E150b is classified under Caramel Color II, all together there are four different classes of caramel colors: I-IV. You can get really confused with different types and names of caramel colors so here are some basic information: Class I: E150a: Plain Caramel, Caustic Caramel or Spirit Caramel has no ammonium or sulfites added.

Class II is E150b , Caustic Sulfite Caramel Color, which has sulfites, like the name says.
Trace amounts in many cases and often the total amount is under 10 ppm, so warning about sulfites is not found in the label so you need to know this and memorize the code E150b, or 150b depending where you are, since E stands for Europe.
E 150b is added to this food color.
Class IV, E150d, Sulfite-Ammonia caramel contains both sulfites and ammonium and this is the sulfite you will find in soft drinks and colas.

Since E 150b is made from the ingredients which are common allergens, like corn, wheat and lactose, this alone might be enough for the most sensitive people to get reactions.
And when you add sulfite compounds to these allergens, there can be reactions even to trace amounts of E150b or E150d.

E 150b is one of the oldest and most widely used food-color additives.
E 150b has an odor of burnt sugar and a pleasant, bitter taste.
However, at the low levels used in food, the taste is not perceptible.
Internationally, the Joint FAO/WHO Expert Committee on Food Additives and Contaminants (JECFA) has divided caramel color into four classes, depending on the reactants used in E 150b's manufacturing.

Uses
E 150b is a colorant that is an amorphous, dark brown product resulting from the controlled heat treatment of carbohydrates such as dextrose, sucrose, and malt syrup.
E 150b is available in liquid and powdered forms, providing shades of brown.
In coloring a food with caramel, the food components must have the same charge as the particles of caramel, otherwise the particles will attract one another and precipitate out.
E 150b can exist as several types, for example, acid-proof caramel of negative charge which is used in carbonated beverages, acidified solutions, bakers’ and confectioners’ caramel which are used in baked goods; and dried caramel for dry mixes.
E 150b major uses are in coloring beverages such as colas and root beers and in baked goods.
E 150b is used as a coloring agent.
E 150b provides products with a slight touch of brown.
Some sources also state that E 150b acts as a soothing agent in skin care preparations.
E 150b is a concentrated solution obtained from heating sugar or glucose solutions.
As a food colorant, E 150b can be used in candy, biscuit, juice (flavor) beverage, ice cream, Popsicle, ice cream, soy sauce, sauce and vinegar according to the production requirements.

Health considerations
E 150b is considered generally safe in the levels used in foods.

Preparation
Made by heating sugar or glucose, adding small amounts of alkali, alkaline carbonate or a trace of mineral acid during the heating.
