E353 Metatartaric acid, also known as 1,1-diphosphonic acid, is an organic chemical compound of the phosphonic acid group.

Chemical Properties    
Light yellow light porous solid, odorless, insoluble in cold water, hygroscopic, and acidic in aqueous solution. 
E353 Metatartaric acid can form soluble complexes with potassium and calcium ions, which are easily decomposed into tartaric acid when heated too much.
E353 Metatartaric acid is an organic polymer produced by heating naturally occurring L-tartaric acid (usually from grapes or sugar cane) to temperatures around 170°C. 
This process causes the tartaric acid molecules to bond together (esterification) into a highly hygroscopic powder.

Uses
As a food additive, E353 Metatartaric acid has the E number E353 and is classified as an acidity regulator.
E353 Metatartaric acid is added to wine to prevent the precipitation of potassium hydrogen tartrate and calcium tartrate.
In the food industry, E353 Metatartaric acid is used as an acidity regulator, antioxidant and metal-binding agent.
E353 Metatartaric acid can also be used in the cosmetic and pharmaceutical industries.

Synthesis    
E353 Metatartaric acid is obtained by baking D-tartaric acid at 168~172℃ for 3.5h, or heating to 180~190℃, and then cooling naturally.
