E354 – CALCIUM TARTRATE

E354 Calcium tartrate is a natural food additive used as an acidity regulator, preservative, and stabilizer.
Derived primarily from wine lees (or produced synthetically), E354 Calcium tartrate is commonly found in jams, canned fruits, baked goods, and beverages.
E354 Calcium tartrate, exactly calcium L-tartrate, is a byproduct of the wine industry, prepared from wine fermentation dregs.

Synonyms
(+)-CALCIUM L-TARTRATE DIHYDRATE;Calciumtartrat;CALCIUM TARTRATE 2-HYDRATE;L-Calciumtartrate;CALICIUMTARTRATE;2,3-dihydroxy-[ theta-( theta, theta)]-butanedioic aci calcium salt;(+)-Calcium L-tartrate hydrate;(2R,3R)-2,3-Dihydroxybutanedioic acid calcium salt

E354 Calcium tartrate is the calcium salt of L-tartaric acid, an acid most commonly found in grapes.
E354 Calcium tartrate's solubility decreases with lower temperature, which results in the forming of whitish (in red wine often reddish) crystalline clusters as it precipitates.
As E number E354, E354 Calcium tartrate finds use as a food preservative and acidity regulator.
Like tartaric acid, calcium tartrate has two asymmetric carbons, hence it has two chiral isomers and a non-chiral isomer (meso-form).
Most E354 Calcium tartrate of biological origin is the chiral levorotatory (–) isomer.
E354 Calcium tartrate is a by product of the wine industry, prepared from wine fermentation dregs.
E354 Calcium tartrate is the calcium salt of tartaric acid, an acid most commonly found in ripe grapes.
Its solubility decreases with colder temperature, which results in the forming of whitish (in red wine often reddish) crystalline clusters as it precipitates.
