E450 (iii) Tetrasodium Pyrophosphate is an inorganic compound in which the pyrophosphate anion (two phosphate groups linked by a P–O–P bridge) is fully neutralized by four sodium cations; its strong affinity for divalent metal ions arises from this P–O–P structure, which can coordinate Ca²⁺, Mg²⁺, Fe²⁺/³⁺, and other ions into stable chelate complexes.

Uses of E450 (iii) Tetrasodium Pyrophosphate:
E450 (iii) Tetrasodium Pyrophosphate is used in processed cheese manufacturing as an emulsifying salt that disrupts calcium phosphate bridges within the casein network, enabling casein hydration, dispersion, fat emulsification, and prevention of oiling-off during heating, with concentration-dependent effects on firmness, meltability, and rheological behavior.
E450 (iii) Tetrasodium Pyrophosphate is used in processed meat products including sausages, ham, and restructured meats to increase the net negative charge on muscle proteins, promoting protein unfolding and water binding, leading to improved tenderness, reduced cooking loss, enhanced juiciness, and improved texture consistency at typical use levels of 0.1–0.5%.

E450 (iii) Tetrasodium Pyrophosphate is used in seafood processing including frozen fish and shellfish to reduce drip loss during thawing by stabilizing muscle protein structure, limiting protein denaturation, and inhibiting oxidative reactions that cause discoloration and off-flavors; residue limits apply (maximum 0.3 ppm for shrimp and prawns).

Production of E450 (iii) Tetrasodium Pyrophosphate:
E450 (iii) Tetrasodium Pyrophosphate is produced industrially by the neutralization of phosphoric acid with sodium hydroxide in a 2:1 molar ratio to form disodium phosphate (Na₂HPO₄), followed by dehydration/calcination to yield the pyrophosphate: 2Na₂HPO₄ → Na₄P₂O₇ + H₂O.
E450 (iii) Tetrasodium Pyrophosphate can also be produced by heating disodium phosphate above its melting point (around 250°C) causing condensation of two phosphate groups with elimination of water, and is manufactured in a closed reaction system with annual production capacity of tens of thousands of tonnes per year.

E450 (iii) Tetrasodium Pyrophosphate is available in anhydrous form (food grade purity ≥95–96.5%, P₂O₅ 52.5–54.0%) and decahydrate form (Na₄P₂O₇·10H₂O), and is packaged in 25 kg Kraft or PP woven bags, 500–1,000 kg big-bags, and 25 kg HDPE pails.
