FUNCTION:

E521 (Aluminium sodium sulphate) strengthens the structure of vegetables during processing. 
E521 (Aluminium sodium sulphate) is used as acidity regulator and bleaching agent in flour.

PROPERTIES:

Like its potassium analog, E521 (Aluminium sodium sulphate) crystallizes as the dodecahydrate in the classical cubic alum structure.
E521 (Aluminium sodium sulphate) is very soluble in water, and is extremely difficult to purify. 
In the preparation of this salt, E521 (Aluminium sodium sulphate) is preferable to mix the component solutions in the cold, and to evaporate them at a temperature not exceeding 60 °C.
