Octyl gallate is the ester of 1-octanol and gallic acid. 
As a food additive, it is used under the E number E311 as an antioxidant and preservative.


Properties
Octyl gallate is a white powder with a characteristic odor. 
Propyl gallate is very slightly soluble in water and soluble in alcohol. 
Its solubility in lard is 1.1%. 
Octyl gallate darkens in the presence of iron.

General description
Octyl gallate (3,4,5-trihydroxybenzoate) is reported to possess antifungal activity against Saccharomyces cerevisiae and Zygosaccharomyces bailii. 
The fungicidal activity associated with octyl gallate is due to its ability to act as a nonionic surface-active agent (surfactant). 
Octyl gallate, an alkyl gallate, is reported to exhibit direct antibacterial activity against Staphylococcus aureus BB568. 
Propyl gallate is reported to inhibit the activity of soybean lipoxygenase-1 (EC 1.13.11.12, type I) with an IC50 of 1.3μM. 
Propyl gallate is also effective in preventing lipid peroxidation.
Application
Octyl gallate was used in a study to investigate the self-assembly in two comb-shaped supramolecules systems consisting of octyl gallate, hydrogen bonded to the pyridine groups of polyisoprene-block-poly(vinylpyridine) diblock copolymers using synchrotron radiation.

During the 1940s, propyl gallate and several other alkyl gallates were allowed for use in foods in a number of countries. 
Since gallic acid contains three phenolic hydroxyl groups, it is a rather potent antioxidant; however, the propyl ester has a significant degree of water solubility. 
As a consequence, propyl gallate tends to partition into any water phase which may be present and to complex with iron salts to give bluish black colors. 
Also, its relatively poor resistance to heat degradation makes it ineffective for baking and frying applications. 
The higher alkyl gallates (butyl and octyl) are more fat soluble.
