Description

Pullulan is a linear homopolysaccharide of glucose, which is produced as a water-soluble, extracellular polysaccharide by certain strains of the polymorphic fungus Aureobasidium Pullulans (De Bary) Arnaud.
Pullulan has adhesive properties and can be used to form fibers, compression moldings, and strong, oxygen-impermeable films. 
In pharmaceutical industry, Pullulan can be used as a denture adhesive, in the sugar coated pharmaceutical compositions to prevent brownish color change of the composition. 
Pullulan can also be used in cosmetics, lotions, and shampoos.
A biodegradable polysaccharide made by yeast fermentation, originally developed in Japan.

Pullulan is a polysaccharide polymer consisting of maltotriose units, also known as α-1,4- ;α-1,6-glucan'. 
Three glucose units in maltotriose are connected by an α-1,4 glycosidic bond, whereas consecutive maltotriose units are connected to each other by an α-1,6 glycosidic bond. 
Pullulan is produced from starch by the fungus Aureobasidium pullulans. 
Pullulan is mainly used by the cell to resist desiccation and predation. 
The presence of this polysaccharide also facilitates diffusion of molecules both into and out of the cell.

As an edible, mostly tasteless polymer, the chief commercial use of Pullulan is in the manufacture of edible films that are used in various breath freshener or oral hygiene products such as Listerine Cool Mint of Johnson and Johnson (USA) and Meltz Super Thin Mints of Avery Bio-Tech Private Ltd. (India). 
Pullulan and HPMC can also be used as a vegetarian substitute for drug capsules, rather than gelatine. 
As a food additive, Pullulan is known by the E number E1204.

Sauces and dressings: Due to its 'adhesive properties' use of granular pullulan in sauces improves their 'on product' retention without unduly increasing sauce viscosity.
Innovative soft candy: Incorporation of 2-3% Pullulan, enables innovative soft chewy candies to be made by a cold extrusion process without resorting to conventional boiling. 
This enables heart sensitive materials to be used in these products.
Coatings: Pullulan solutions which are odorless and flavorless can be used as a coating for a wide range of food products to improve appearance, reduce blemishes and increase shelf life.
Capsules: Pullulan can be formed into capsules for use with pharmaceutical and nutraceutical products.

Pullulan has adhesive properties and can be used to form fibers, compression moldings, and strong, oxygen-impermeable films.

Characteristics of Pullulan polysaccharide:

1.Non-toxic safety: According to the results of the acute, subacute and chronic toxicity tests of Lullulan polysaccharide, even if the dosage of Lullulan polysaccharide reaches the LD50(half lethal dose) limit of 15g/kg, Pullulan will not cause any biological toxicity and abnormal state, so Pullulan is used in food and medicine Pullulan's safe for the chemical industry and Pullulan is a prebiotic.

2. Solubility: Pullulan polysaccharide can be dissolved in water, dissolution rate than carboxymethyl cellulose, sodium alginate, polypropylene alcohol, polyvinyl alcohol more than two times faster, the solution is neutral, no ionization, no gelation, no crystallization. 
Different water temperatures have little effect on the dissolution properties of Pullulan, so the dissolution temperature range of pullulan is wide (0~100ºC). 

3.Stability: The molecules of Pullulan have linear structure, so compared with other polysaccharides, the aqueous solution of Pullulan is less viscous and does not form colloid. 
Pullulan is a neutral solution with strong adhesion. 
Pullulan contains almost no reducing group and only produces weak intermolecular forces with other molecules. 
When the pH value is below 2.5, if heated for a long time, Pullulan will partially decompose like other polysaccharides, resulting in a decrease in the viscosity of the solution.

4. Acid and alkaline resistance: Pullulan is acid-resistant but not alkali-resistant, and Pullulan's pH tolerance ranges from 2.5 to 9.5.

5. Stickiness: Pullulan polysaccharide has strong viscosity.
