Sodium fumarate, also called disodium fumarate, is a compound with the molecular formula Na2C4H2O4. Sodium fumarate is the sodium salt of fumaric acid, used as an acidity regulator in processed foods.
Sodium fumarate and fumaric acid are sometimes used as terminal electron acceptors in the cultivation of certain anaerobic microorganisms.
Sodium fumarate appears as an odourless, white, crystalline powder and is soluble in water.

-Uses-
Sodium fumarate is used as an acidity regulator in food processing and as terminal electron acceptors in the cultivation of certain anaerobic microorganisms.
Sodium fumarate is also used as a buffering agent and pH adjuster in cosmetic and personal care products.
Further, Sodium fumarate is used as a food additive.

-Preperation-
The compound excipient containing sodium stearyl fumarate and plasdone S-630 was prepared by applying spray drying method.
The basic physical properties of compound excipient were studied by solubility test, scanning electron microscope, differential scanning calorimeter, X-ray diffraction and Fourier transform infra-red spectroscopy.
The effect of compound excipient on moisture absorption and ferulic acid in vitro dissolution of spray drying power of angelica were investigated.
The results showed that the chemical constituents of compound excipient did not change before and after spray drying.
The water soluble compound excipient can improve significantly moisture absorption and has application prospect.

-Processing of Sodium Fumarate-
Characterization, thermal stability and thermal decomposition of light trivalent lanthanide fumarates, as well as, the thermal behaviour of fumaric acid and its sodium salt were investigated employing simultaneous thermogravimetry and differential thermal analysis, differential scanning calorimetry, Fourier transform infrared spectroscopy (FTIR), TG–FTIR techniques, elemental analysis and complexometry.
On heating, sublimation of fumaric acid is observed, while the thermal decomposition of the sodium fumarate occurs with the formation of a mixture of sodium carbonate and carbonaceous residue.
The thermal decomposition of light trivalent lanthanide fumarates occurs in consecutive and/or overlapping steps with the formation of the respective oxides: CeO2, Pr6O11, and Ln2O3 (Ln = La, Nd, Sm, Eu, Gd)
