TYPES OF COCONUT OIL

-RAW
Virgin coconut oil (VCO) can be produced from fresh coconut milk, pulp or residue.
Producing it from fresh meat involves wet grinding or drying the residue and using a screw press to remove the fat.
VCO can also be extracted from fresh meat by grating it and drying it to 10-12% moisture content, then using a manual press to remove the fat.
Producing coconut milk involves grating the coconut, mixing it with water, and then squeezing out the oil.
The milk can also be fermented for 36-48 hours, the fat removed and the cream heated to remove any remaining fat.
A third option involves using a centrifuge to separate oil from other liquids.
Coconut oil can also be obtained from dry residues left over from coconut milk production.


-REFINED
Refined, bleached and deodorized (RBD) oil is usually made from copra and dried coconut kernels pressed in a heated hydraulic press to extract the oil.
This yields almost all of the oil available, accounting for more than 60% of the dry weight of the coconut.
This crude coconut oil is unfit for consumption as it contains contaminants and needs to be refined through further heating and filtering.
Another method for the extraction of coconut oil involves the enzymatic action of alpha-amylase, polygalacturonases and proteases on diluted coconut paste.
Unlike virgin coconut oil, refined coconut oil does not have a coconut taste or aroma.

Coconut oil contains only 6% monounsaturated and 2% polyunsaturated fatty acids.
In the partial hydrogenation process, some of them are converted into trans fatty acids.

-FRACTIONATION
Fractionated coconut oil provides fractions of the entire oil so different fatty acids can be separated for specific uses.
