Dodecyl gallate, or lauryl gallate, is the ester of dodecanol and gallic acid.
As a food additive it is used under the E number E312 as an antioxidant and preservative.

Dodecyl gallate is a derivative of the antioxidant gallic acid (Item No. 11846) that has diverse biological activities, including antioxidant, antiproliferative, and antibacterial properties.
Dodecyl gallate inhibits proliferation of a variety of cancer cells, including WEHI-231 mouse B cell lymphoma, Daudi human lymphoma, and HT-29 human colon cancer cells (IC50s = 0.8, 1.4, and 17.0 µM, respectively).
Dodecyl gallate induces apoptosis of WEHI-231 cells but not L-929 mouse fibroblasts. 
Dodecyl gallate decreases peroxidation of ox brain phospholipid liposomes by 71 and 76% when used at concentrations of 12 and 50 µM, respectively, and scavenges trichloromethyl peroxyl radicals at 0.05% w/v.
Dodecyl gallate is active against a variety of Gram-positive bacteria, including B. subtilis (MIC = 25 µg/ml), as well as M. luteus, S. aureus, and methicillin-resistant S. aureus (MRSA; MICs = 12.5 µg/ml for all), and acts by inhibiting the bacterial membrane respiratory chain.

Dodecyl gallate (Lauryl gallate) has been widely used as an antioxidant in food manufacturing, as well as in the pharmaceutical and cosmetic industries. 
Dodecyl gallate also is active against a highly relevant animal virus such as African swine fever virus (ASFV).


Dodecyl gallate (Lauryl gallate) is an ester derivative of gallic acid, a natural plant phenolic compound.
Dodecyl gallate (Lauryl gallate) protects cells from oxidative stress, in a process associated with radical scavenging, inhibition of enzymes involved in lipid peroxidation, and increasing expression of antioxidant genes. 
Due to its hydrophobic properties, Dodecyl gallate can disrupt biomembranes and cause protein inactivation

Description

Cases have been reported in workers in the food industry, gallate being contained in margarine. 
Dodecyl gallate is also present in washing powder.
