E 211 is used in soft drinks, fermented dairy products, snacks such as cakes and biscuits, vegetable and spice seasonings, food enzymes, bakery products and margarine.

FUNCTION:

Although E 211 is found in many plants, it is converted to the active sodium benzoate form to overcome its solubility challenges.
E 211 is an effective preservative in baked products due to its activity against molds responsible for spoilage of most baked products. 
E 211 is also used to control yeast, pathogenic and spore forming bacteria.
In aqueous media and pH around 5.0, E 211 transforms to benzoic acid which in the undissociated form can disrupt microorganisms’ cell wall. 
At pH 4.0, 60% of the molecule is in the undissociated form compared to only 1.5% at pH 6.0.2

PRODUCTION:

E 211 is commonly produced by the neutralization of sodium hydroxide (NaOH) with benzoic acid (C6H5COOH), which is itself produced commercially by partial oxidation of toluene with oxygen.
Many foods are natural sources of E 211, its salts, and its esters.
Other sources include seafood, such as prawns, and dairy products.
