E100 is a food additive approved by the European Union (E.U.). 
E100 is used as a natural colouring agent in food products, and may also be produced artificially.
E100's common name is Curcumin.

E100 is derived from the root of the curcuma (turmeric) herb. 
E100's colour ranges from yellow to red, depending on the surrounding pH. 

E100 is a member of the ginger family.
E100 has anti-carcinogic and antioxidant properties.

E100 is a bright yellow natural food color additive obtained from the plant of Curcuma longa. 
By its chemical nature, E100 is polyphenols, which dissolve easily in alcohol

E100 is insoluble in water. 
In alkaline solution, the E100 additive gets a brown-red color, while in mineral acids the  E100 colorant does not change its color.

The chemical formula of E100 in is C21H20O6. 
E100 is produced by extracting powder from the root of the Curcuma with petroleum ether and after alcohol. 
The concentration of the resulting alcohol extract can be adjusted to the required amount of colorants.

E100 has anti-inflammatory,antioxidant and antitumor properties.
These therapeutic properties of E100 are based on the ability of molecules to penetrate the membranes of cells of various organs, making them resistant to infection.

USES:
Due to the peculiarity of the E100 to color yellow both vegetable and animal fibers, Curcumin was widely used in the food industry as a natural colour, similar to artificial azo dyes.
Curcumin in the form of  the E100 food additive is used as a colorant in the production of:
-Cheeses

-Butter and margarine

-Mustard

-Curry spices (spices added to rice, vegetables, dough, meat, fish dishes)

-Canned food

-Jam and jelly

-Dehydrated fats

-Bitter soda drinks

Having a bitter burning taste and slightly camphor-scented smell, the E100 color is 
E100 widely used in the confectionery industry, in liqueurs, wine and other alcoholic beverage production.

E100 is also used in the meat industry because of its pronounced taste, to improve and enhance the taste of meat and meat products.
In some countries, E100 is used in traditional medicine. 

In India, E100 is used as a cure for coughing, rheumatism, loss of appetite, as well as for the treatment of sprains, and in China, it is used to relieve various abdominal pains.
E100 is a beta-diketone that is methane in which two of the hydrogens are substituted by feruloyl groups.

E100 has been widely used in the food industry as a common natural pigment for a long time. 
E100 is mainly used for the dyeing of canned food, sausage products and soy sauce products

E100 is orange-brown crystalline powder and tastes a little bitter. 
E100 will turn into reddish brown in alkaline solution and yellow in neutral and acidic solution.

E100 is sensitive to light, heat, and iron ion. 
When PH is greater than 8, E100 turns from yellow to red, which can be used as a pH indicator.

E100 is insoluble in water or diethyl ether and soluble in ethanol, propylene glycol, acetic acid, and alkali solution.
E100's melting point is about 183 °C.
