Octyl gallate is the ester of 1-octanol and gallic acid. 
As a food additive, it is used under the E number E311 as an antioxidant and preservative.

Properties
Octyl gallate is a white powder with a characteristic odor. 
Octyl gallate is very slightly soluble in water and soluble in alcohol. 
Its solubility in lard is 1.1%. 
Octyl gallate darkens in the presence of iron.

Uses:
This antioxidant is used in numerous pharmaceutical, cosmetic, and food products; such as soaps, shampoos, shaving soaps, skin lotions, deodorants, margarine, and peanut butter.

Octyl gallate is a synergistic antioxidant with butylated hydroxytoluene (BHT) and butylated hydroxyanisole (BHA).


Description    
Octyl gallate is the ester formed by 1-octanol and gallic acid. Octyl gallate can be used as an antioxidant and preservative to be supplemented with food. 
Octyl gallate has been demonstrated to be an effective fungicide being capable of inhibiting the growth of S. cerevisiae and Z. bailii as it can inhibit the fluidity of the cell membrane by acting as a nonionic surface-active agent. 
Octyl gallate is also capable of killing both DNA and RNA viruses with relatively moderate cytotoxicity. 
For example, it has the potential to treat influenza. 
Octyl gallate also has certain bactericidal activity, being capable of treating the infections associated with enterococci.

During the 1940s, propyl gallate and several other alkyl gallates were allowed for use in foods in a number of countries. Since gallic acid contains three phenolic hydroxyl groups, it is a rather potent antioxidant; however, the propyl ester has a significant degree of water solubility. 
As a consequence, propyl gallate tends to partition into any water phase which may be present and to complex with iron salts to give bluish-black colors. 
Also, its relatively poor resistance to heat degradation makes it ineffective for baking and frying applications. 
The higher alkyl gallates (butyl and octyl) are more fat-soluble.

Octyl gallate, also known as octyl gallic acid, belongs to the class of organic compounds known as galloyl esters. 
These are organic compounds that contain an ester derivative of 3,4,5-trihydroxybenzoic acid. 
Based on a literature review a significant number of articles have been published on Octyl gallate.

1. Octyl Gallate is an antioxidant approved by the US Food and Drug Administration (FDA) as a food additive. 
2. Octyl Gallate has antimetastatic activity. 
3. Octyl Gallate shows antimicrobial activity against H. pylori, with a minimum inhibitory concentration (MIC) value of 125 ug/mL. 
4. Combination therapy with octyl gallate and ferulic acid improves cognition and neurodegeneration in a transgenic mouse model of Alzheimer's disease.
5. Octyl Gallate is a potential anticancer agent, it exhibited decreased MCF-7 & MDA-MB-231 survival and induced apoptosis, with IC50 value of 40 uM. 
6. Octyl gallate has antiviral activity, it shows an inhibitory effect on the growth of herpes simplex virus type 1 (HSV-1) in HEp-2 or Vero cells. 
7. Octyl gallate shows antifungal activity against Saccharomyces cerevisiae ATCC7754 and Zygosaccharomyces bailii ATCC 60483.
