Propylene Glycol Monostearate is a lipophilic emulsifier that is a propylene glycol ester. it is used as a dispersing aid in nondairy creamers; as a crystal stabilizer in cake shortenings and whipped toppings; and as an aeration increaser in cake batters, icings, and toppings. it is also used in oils and shortenings.

Propylene Glycol Monostearate
Propylene Glycol Monostearate (PGS) is a mixture of the 1,2-propanediol mono- P and diesters of stearic and palmitic acids in which the monoester, propylene
glycol monostearate, predominates. It is produced by reacting propylene glycol
and triple-pressed stearic acid under elevated temperatures in the presence of a
catalyst.

Propylene Glycol Monostearate is  white to cream-colored, waxy solids that have.a slight, characteristic, fatty odor and taste. They are marketed in the form of beads or PGS is soluble in such organic solvents as alcohols, mineral or fixed oils, hot cottonseed oil, peanut oil, isopropyl myristate, benzene, chloroform and other chlorinated hydrocarbons, ether, acetone, and ethyl acetate. It is insoluble in water, propylene glycol, glycerine USP, PEG 400, and 70% sorbitol, PGS may be dispersed in hot water with the aid of a small amount of soap or other suitable surface active agent.(2*4.6.1ss16) PGS-SE contains such a soap component.
Propylene glycol monostearate is quite surface active. It is adsorbed at the oiI/water interface, and it forms a thick plastic film under the proper conditions of concentration and temperature.‘”) PGS produces more weakly organized, amorphous emulsions than do polyol esters.(’8) A racemic 80:20 mixture of propylene glycol monostearate and propylene glycol 2-monostearate shows four different polymorphic modifications of crystalline structure. Detailed discussions of PCS crystalline structure have been publis hed.‘ Methods for the commercial and laboratory syntheses of PGS and PGS-SE. Neither PGS nor PGS-SE absorbed UV-B light between 280 and 320 nm.

USE

Purpose and Extent of Use in Cosmetics
Propylene Glycol Monostearate produces a "waxy, occlusive, water insoluble film" when applied to the skin.I3') The major uses of PGS and PGS-SE in cosmetics are as emulsifiers, emollients, texturizers, lubricating agents, and viscosity builders. They are generally included at concentrations of 0.5%-5% in lotions and 1 %-1O% in creams.The potassium stearate component of PGS-SE provides for greater emulsifying power.

Noncosmetic Uses
In the pharmaceutical industry, Propylene Glycol Monostearate serves as an emulsifying agent and fatty base for suppositories and rectal ~intments. It is classified as an inactive ingredient in topical analgesic, antirheumatic, otic, burn, and sunburn treatment/

In foods, propylene glycol mono fatty acid esters are used as emulsifiers and stabilizers either alone or in combination with mono- and digly~erides. Propylene Glycol Monostearate has been used in the United States since 1958 because it improves the texture, softness, and "keeping quality" of several foods. The literature describes its use in such foods as macaroni,(41) mashed potatoes,'42) rnassec~ites,milk fat emulsion,fats and oils, cheese, frozen dairy desserts, imitation dairy products, gelatins and puddings, sweet sauce, alcoholic and nonalcoholic beverages, and baked good. It is used at concentrations up to 12.Ooh in edible fats and oils.


Propylene glycol is a colorless, viscous liquid. It has a wide range of applications including industrial solvents, paint and coating solvents, polyester and alkyd resins, antifreeze coolants, heat transfer fluids, deicing fluids, plasticizers, detergents and surfactants, and bactericide. USP grade is used in foods, pharmaceutical, and personal care products. Propylene glycol monostearate is not approved in Germany.

Propylene glycol monostearate (PGMS) is only slightly water dispersible, but completely soluble in fats and oils, therefore it is used only in combination with oils and fats as an emulsifier and emulsion stabilizer. In food it is mainly used in cake batters, cake icings, cake shortening, margarine, oils, oleomargarine, poultry fat, whipped toppings, icecream, and yeast. As a defoamer, it is used in food-contact paper and paperboard. In cosmetic industry it is used as an emulsifier for lotions, soft cream, makeup, humectant in dry skin products.

As most emulsifiers can decrease the amount of fat or oil in the product or add bulkiness or soften texture by increasing the amount of air suspended throughout the product, emulsifiers can serve to some degree as substitutes for fat and can decrease calories. Emulsifiers can be divided in natural and synthetic. Within the natural emulsifiers, the lecithins are by far the main products. Raw lecithin is produced mainly from soybeans. Lecithin is the most widely used chocolate emulsifier. Other important applications include baked goods and dairy products.

Propylene glycol monostearate, also known as monosteol or 1,2-propanediol monostearate, belongs to the class of organic compounds known as fatty acid esters. These are carboxylic ester derivatives of a fatty acid. Propylene glycol monostearate is a very hydrophobic molecule, practically insoluble (in water), and relatively neutral.

Propylene Glycol Monostearate is a mixture of the propylene glycol mono- and di-esters of stearic and palmitic acids. It contains not less than 90.0 percent of monoesters of saturated fatty acids, chiefly propylene glycol monostearate (C21H42O3) and propylene glycol monopalmitate (C19H38O3).
