Traditional sunflower oils have fallen into two categories, one high in oleic acid and the other high in linoleic acid. 
Linoleic acid is one of the essential fatty acids in the human diet, and linoleic varieties of sunflower oil contain nearly 70 percent polyunsaturated linoleic acid.

CULTIVATION of SUNFLOWER:
Sunflower (Helianthus annuus L.) is one of the few crop species that originated in North America (most originated in the fertile-crescent, Asia or South or Central America). 
Sunflower was most likely domesticated by Native Americans around 1000 BC, who the carried Sunflower eastward and southward of North America.
Sunflowers were probably first introduced to Europe through Spain.

Sunflower, spread through Europe as a curiosity until Sunflower reached Russia, where Sunflower was readily adopted. 
In Russia, selection of seeds that were high in oil began in 1860.
This selection of high producer varieties was largely responsible for increasing Sunflower Oil content from 28% to almost 50%. 
The Sunflower Oil  lines from Russia were reintroduced into the U.S. 
After World War II, which rekindled interest in Sunflower.
However, it was the discovery of the male-sterile and restorer gene system that made hybrids feasible and increased commercial interest in the crop. 

Production of sunflowers subsequently rose dramatically in the Great Plains states because of new niches for the seeds, including oil, snack food, and bird seed. 
Production in these regions in the 1980s has declined mostly because of low profit margins as well as pests.
Sunflower acreage is now moving westward into dryer regions; however, 85% of the North American sunflower seed is still produced in North and South Dakota and Minnesota.

SUNFLOWER OIL IS REFINED:
This refining process is typically called “RBD” in the bulk world. 
RBD stands for Refined, Bleached & Deodorized. 
These terms represent how the oil was processed after being produced. 
It means that sunflower oil went through a refining process, which strips a lot of the natural color and flavor from sunflower oil.

The exact refining process is different for each type of oil, though there are some components that look very similar.
For the most part, it is typically a high heat process, which uses heat or steam. 
They also typically use an earthen bleaching clay to pull any pigment out of the oil. 
Lastly, the process will often involve filtering, or sometimes double filtering the final product.
The end result is a light colored, neutral flavored, almost-clear oil.
This refining process is also used with many different oils: for example canola, soybean, coconut and grapeseed oil along with pure olive oil, extra light olive oil and many more.

THE CHARACTERISTICS of SUNFLOWER OIL:
Sunflower oil is a mild, unobtrusive oil that has a high heat tolerance and very little flavor. 
Sunflower oil is often used for frying and sautéing because Sunflower oil doesn’t impart it’s own flavor into foods. 
Sunflower oil is more often used for Sunflower oil's functionality.

In general, Sunflower oil has:
*Light yellow, almost clear color
*Very little flavor profile and a mile aroma
*High smoke point and good heat tolerance
*High oleic versions are stable with long fry and shelf life
 


COMMERCIAL PRODUCTION of SUNFLOWAR OIL:
Cleaning: removal of foreign matter such as dirt and stalks.
Dehulling: removal of hulls using mechanical impact and air separation.
Flaking: seeds are flaked to aid in oil extraction by passing  through several rollers.
Cooking: seeds are cooked and dried down to 4-5% moisture at 90-100°C (194-212°F).
Pre-pressing: the cell structure is disrupted with a set of rollers. 65% oil extraction.
Pre-clarification: solids in the oil settle in a tank, and are later removed.

Solvent extraction: cake is extracted with a solvent, typically hexane.
Desolventizing: removal of remaining hexane in the cake.
Distillation: removal of the hexane present in the oil.
Degumming: removal of phospholipids from the crude oil with an acid-oil mixture.
Refining: further removal of phospholipids with addition of an acid mixture, and removal of free fatty acids with an alkali solution.
Bleaching: removal of pigments and other contaminants with bleaching clay.
Deodorization: removal of undesirable odors.

COMPOSITION of SUNFLOWER OIL:
Sunflower oil is mainly a triglyceride. 

The British Pharmacopoeia lists the following profile:
*Palmitic acid (saturated): 5%
*Stearic acid (saturated): 6%
*Oleic acid (monounsaturated omega-9): 30%
*Linoleic acid (polyunsaturated omega-6): 59%

Four types of sunflower oils with differing concentrations of fatty acids are produced through plant breeding and industrial processing: 
*High-linoleic, 69% linoleic acid
*High-oleic, 82% oleic acid
*Mid-oleic, 65% oleic acid
*High-stearic with high-oleic, 18% stearic acid and 72% oleic acid

In an analysis of the sunflower genome to reveal plant metabolism producing its oil, phytosterols were identified, as confirmed in another analysis of sunflower oil components, including polyphenols, squalene, and terpenoids.
Several varieties of sunflower oil seeds have been developed by standard plant breeding methods, mainly to vary the amounts of oleic acid and linoleic acid which, respectively, are the predominant monounsaturated and polyunsaturated fats in sunflower oil.

INDUSTRIAL SUNFLOWER OIL PRODUCTION PROCESS:
The hydraulic press was long used to obtain sunflower oil. 
Nowadays, sunflower oil is mainly produced industrially using expeller presses. 
The production process comprises two main stages: seed pressing and crude oil refining. 
Pressing extracts the oil from the seeds while refining eliminates the compounds that affected the smell, flavour and appearance of the oil during pressing.

To prepare the seeds for pressing, a series of operations must be carried out. 
The seeds are firstly cleaned by sieving (rotating or vibrating sieves) and by magnetic separation, to eliminate the impurities (stems, leaves, stones, pieces of metal). 
The seeds are generally ground in a hammer or fluted roller mill, along with the hulls, as these cannot be reused. 
Once ground, the seeds are crushed between smooth rolls, then heated in cookers at 88°C to sterilise them. 

After cooking, the seeds are dried at 110°C to dehydrate them and harden their structure. 
When ready for pressing, they are placed under an expeller press and heated to between 80°C and 120°C to extract the oil. 
The residue, called oil cake, is treated with a solvent or water to also extract oil. 
Unlike industrial hot pressing, cold pressing is a purely mechanical process with no added heat or refining. 
The pressing temperature does not exceed 60°C. This produces oil with a more intense flavour and smell.

Once the oil has been obtained, the refining process involves several treatments: degumming, neutralising, bleaching, deodorising and anti-oxidising. 
Degumming removes the compounds which may affect the flavour and helps improve the stability of the oil when heated. 
Various treatments exist: water, acid and dry degumming.
Neutralising removes the free fatty acids, usually by adding sodium hydroxide which turns them into soap. 

Once neutralised, the oil is washed in water to eliminate any residual soap. 
The pigments in the oil are removed with activated carbon, silica or oxidants. 
The oil is then filtered or centrifuged to remove the wax.
Finally, to improve the oil’s shelf-life, water in the form of gas (dry steam) is injected into the oil, while it is maintained under vacuum at high temperatures (220°C to 275°C) for between 1.5 and 3 hours.

HISTORY of SUNFLOWER OIL:
Sunflower seed oil is especially popular in Russia, where Sunflower oil arrived after the in the eighteenth century via Europe. 
Sunflower Oil became a popular substitute for butter and lard, both of which were prohibited during Lent by the Russian Orthodox Church. 
By the nineteenth century, sunflowers were a major crop in Russia and Ukraine. 

Sunflower oil still the principal cooking oil in Russia, the world's leading producer of sunflower oil.
In Sunflower oil's native North America, sunflower oil was dominated by cheaper corn and soybean oils, which were often hydrogenated (aka trans fat!) to make them more stable in processed foods, like potato chips. 
In the ‘70s, health-conscious Americans turned to sunflower oil because of Sunflower oil's high percentage of polyunsaturated fats (59 to 62 percent), believing Sunflower oil reduced cholesterol and the risk of heart disease. 

In the ’90s, when we learned about the dangers of trans fats, potato chip producers switched to sunflower oil en masse, beginning a sunflower-oil renaissance.
You probably know sunflower oil best as an ingredient sold in clear plastic bottles. 
Sunflower oil also a common ingredient in processed foods. 
In recent years, sunflower oil has gained a reputation as a healthy oil for not only cooking, but also for skin and hair.
Sunflowers as a food crop go back a long time and have journeyed all over the world. 

In the genus Helianthus, sunflowers are native to North America, and Sunflower Oil appears that Native Americans first domesticated sunflowers thousands of years ago.
Explorers eventually brought sunflower seeds back to Europe.
Russia planted them extensively on a commercial scale for oil production.

The best way is to choose one that says “high oleic” right on the bottle, but not many of them do.
